The width in characters is the character width of the search box. The Label for Start Search you can change if you want to, similarly the Reset button you can change the title of. On your Search Form Properties box, click on the Search Results Tab.

Ensure the search All feature is ticked.

You can choose to display the file date and the file size in the Display Options boxes by ticking or un-ticking them according to how you want them to display in your web.
